Breakfast Burrito

by Jayce Reese in , ,

So when you mix your favorite omelette with a flour tortilla you get a pretty amazing breakfast burrito!  So feel free to follow this recipe below but also to create your own omelette with whatever fillings you prefer and throw it on a tortilla for your very own breakfast burrito!

I personally love bacon, onions, peppers and cheese in my omelette.  So ensure you have all your mixes chopped and ready to be thrown in the egg.  I always use two eggs per omelette and add milk while scrambling.  In skillet add a little of olive oil and pour your scramble eggs and throw your mixes on top.  If you're really good, let the egg settle in the pan and flip. Me, I'm not that great at flipping the eggs so my omelettes usually turn into scrambles.  Warm your tortilla in the microwave on in a skillet and you can lightly line with sour cream and salsa and throw your omelette inside and wrap!

Sunday Supper Chronicles Part: 1

by Jayce Reese in , ,

Sunday suppers wouldn't be supper without some homemade baked macaroni and cheese.  This Sunday supper was no exception.  It's a rather easy and quick way to ensure everyone's souls are fed well to begin a new week!  On tonight's menu was baked tilapia, macaroni and cheese with bacon and brussel sprouts.

I would advise starting on the mac and cheese first as it takes the longest to bake.  The first step is boiling your noodles to al dente.  Once the noodles are finished you'll strain and layer noodles in a bake dish with cheese, butter and light salt and pepper.  Once finished add a quick, raw, scrambled egg with milk to the top to help it all gel together.  Bake at 350 for about 45 minutes or until the cheese at the top is crispy enough for you.

I also LOVE bacon on top of my mac and cheese so I would throw some pieces of bacon in the oven on a cookie pan or deep bake dish as I don't like to battle frying bacon on the stove! Hold on to the grease from the bacon as it will be used later.

To prep the tilapia, rinse thoroughly and lightly coat with olive and oil.  Then add your choice of seasoning and also place in the oven at 350 for about 20 minutes.

Once the bacon is done, use the grease to fly fry the brussel sprouts.  Rinse the brussel sprouts and slice in half.  Once cooking in the bacon grease add light salt and pepper.

Dad's Famous Bow Tie Pasta

by Jayce Reese in , ,

Ingredients:

Farfalle pasta noodles

1 Orange or yellow pepper

4-6 slices of thick cut bacon

Kale or fresh spinach

Heavy whipping cream

1 stick of Butter

Boil noodles until tender and drain. Add garlic salt and pepper to noodles. Dice pepper. You may cook the bacon on the stove but I prefer to bake mine at 375 for 15-20 minutes. The bacon actually comes out tasting better and you protect yourself from potentially getting popped with grease!  After the bacon is finished, pour a bit of the grease in a skillet and sauté the peppers and kale/spinach. If you wanted to add some other meat like shrimp or any other seafood, sauté along with the veggies. Move all of that to separate bowl and begin to make the homemade white pasta sauce.

Melt 1/2 stick of better add a hefty amount of garlic salt, black pepper, and parsley to the butter. Once it's almost melted, add about 2/3 of the whipping cream container. You can really play it by eye and determine how saucy you want your pasta. Allow the cream and butter to sit for 2-3 mins and stir occasionally and add a bit more of the garlic salt and pepper.  Then add the noodles, veggies and bacon. Add more garlic salt, pepper and parsley flakes. Then stir and allow for pasta to cook on stove top until sauce thickens.
